Something On Toast - Banana and Ricotta

Try finding the fresh made ricotta - firmer and flavour is everything. If you don't have bananas, try with fresh fig, or a sweet pear.

Ingredients:


The hero is always the bread. Choose a good artisan sour dough.
• 2 slices bread lighty toasted
• 1 ripe banana
• Ricotta
• Sugar
• Cinnamon
• Walnuts

Method:


Put half of a banana on each piece of toast - squashing a bit with the back of the knife. Sprinkle with sugar, top with ricotta, cinnamon and finally a few fresh walnuts
