Poached Dried Fruit and Yoghurt

Reduce the amount of sugar if you prefer - the fruit can be sweet enough and the honey adds additional sweetness at the end. This recipe can be made days in advance and eaten each morning. Add a toasted muesli for extra crunch.

Ingredients:


• 1/2 cup brown sugar and 3 cups water
• 1 cup dried apricots, figs and pears
• 1/2 cup of pitted prunes and peaches
• Cinnamon
• Sqeeze lemon

Method:


Soak dried fruit overnight in water.
Make sugar syrup from sugar and water.
When dissolved boil for 5 mins
Quarter the fruit and add to syrup with cinnamon stick and cook until they have softened. Remove cinnamon stick.
Add squeeze of lemon juice and allow to cool.
Serve with dob of natural yoghurt and drizzle of honey.
